Roasted Cumin Potatoes

1.5 lbs. red/new potatoes, quartered or cubed
2 Tbsp olive oil
1/2 cup red onion, finely chopped
2 garlic cloves, minced
1 Tbsp cumin powder
1 tsp paprika
1/2 tsp ground coriander
salt, to taste (about 2 tsp)
black pepper, to taste (about 1 tsp)
2 Tbsp fresh cilantro, chopped

Preheat the oven to 375 degrees. In a mixing bowl, toss the potatoes with the olive oil, red onion, garlic, cumin, paprika, coriander, salt, and pepper. Roast potatoes for 30-40 minutes or until the potatoes are golden brown. Remove from heat and toss with chopped cilantro.

*Note: 450 for 20-25 minutes also works
